Sitting at home, I was thinking what can I make with the spring onion dip I had sitting in my fridge. So my idea came to a complete tasty meal.
There is always something you can come up with with minimal ingredients in your fridge or pantry.
Ingredients :
Small piece of spicy chorizo
Spring onion dip
Handful of baby spinach
1 cup Orecchiette pasta
2 spoons Chives
I cup Frozen peas + corn
Method :
Boil water and add pasta and cook until desired texture
Add a small amount of olive oil to a fry pan.
Cut chorizo into small pieces + fry until brown.
Add a little of the pasta water.
Add spinach and peas and corn.
Add spring onion dip with a little more of the pasta water and cook until thickened.
Drain pasta and add to pan.
Cook until desired.
